This month, Scarlet Zhu and Jack Chen, the fun-loving owner and the bartender at Scarlet A, talk summer drinks, ‘alcoholism’ and loyalty.
Tell us about your backgrounds in the bar industry.
SZ: I was just a normal person who liked drinking – an alcoholic [laughs].
JC: She’s joking.
SZ: I don’t drink as much anymore though.
JC: I used to work in bars in New Zealand and here. I like mixing drinks because it’s fun – I feel free to do the things I like.
What are your favorite drinks?
SZ: I like Springbank [whisky].
JC: Rum because it’s stronger, sweeter and easier to drink.
SZ: And cheaper!
JC: Right, you don’t need an expensive one. The price of a low-quality whisky is the same as a high-quality rum.
Which Scarlet A cocktail is most popular?
JC: We’re changing the menu soon, but from our current one, customers seem to like the Jordan Baker and Don Diego the most. They have a smoky taste.
So, what’s hot for the summer at Scarlet A?
JC: We’re keeping the best-sellers and adding some new chilled drinks using seasonal fruits.
Sounds good. Will you also have some sweet deals?
JC: Yeah, we will have a new late-night happy hour, from 11 until we close – for the people who are still partying. It’ll be RMB50 cocktails and RMB20 shots.
Do you have any quirky customers?
SZ: There’s one guy who comes in every week, sometimes four days in a row. The interesting thing is that he’d never had a cocktail before he came here. And now he’s crazy into our bar. He drinks a lot – 10 cocktails a night – but is usually just tipsy. He’s one of our best customers.
